Mamma Ganoush just happened when we were invited to attend a Vegan Festival in Newcastle.
We looked at what we cooked on the stall and realised if you took a couple of things away we served vegan street food. Suffice to say the queues for the falafel were astonishing. We have travelled extensively to taste different blends of falafel and even tasted a supermarket one (Yag!) But there are some real beauties in Paris. Like everything else we have done we just fiddled around with spices to get a great savoury experience and it’s spot on now. Have a look at our recipes to find one of our versions?
The great thing is we have created about 4 different varieties with one really hot one; well it’s got to be done really!
Allegedly it was the Yemeni immigrants to Israel who developed the street food variety of falafel in 1950s, the roots of falafel go back centuries and this has given us great exposure at vegan festivals throughout the UK. But its not just the falafel that’s important; the combination and textures of the salads really enhance the flavours. Our homemade sauces too, such as the Amba, round off a delicious wrap.
Just pity there aren’t more local vegan and vegetarian events locally, hence why we are going to open our new mezze bar locally so we can really showcase our dishes.
